This project is a lifetime in the making.
In middle school my kitchen claim to fame was accidentally lighting water and milk on fire trying to make macaroni and cheese.
As an adult, I got a little better preparing simple meals, but I didn’t enjoy trying to cook for myself every night of the week. I spent years relying on processed food and take out. Over time, it became too expensive and unhealthy and I slowly ventured into the world of food prep. I suffered through weeks of overcooked chicken and broccoli. I hated eating the same things every day. I couldn’t bring myself to reheat the same lunch by the time Thursday rolled around.
I was eating healthier, and my energy levels rose from eating whole foods and a balanced diet more consistently, but I was not enjoying it AT ALL! I also felt chained to my stove on Sundays. If I had plans and missed my meal prep window, I was thrown off for the rest of the week and was forced right back to take out! I said to myself, there must be a better way.
Over the last five years, I’ve developed a slew of healthy habits and time saving hacks to plan and prepare healthy meals for breakfast, lunch, and dinner without spending all day Sunday in the kitchen, and providing myself a variety of meals throughout the week – without cooking every day. I’m using this project to document what I’ve learned over this time in an effort to help and inspire others on the same journey.
A little more about me…
I grew up and live in Connecticut. I love both traveling to enjoy food from around the world and exploring local New England restaurants and attractions. Local seafood is one of my favorites: lobster rolls, oysters on the half shell, and of course New England clam chowder!
I believe strongly in supporting local agriculture and the farmers in your area. I try to grow, buy, and eat local vegetables in the summer as much as I can. I am lucky to be surrounded by many farms and backyard gardens in this area.
